I used to man-handle pancakes as a child.
Aggressive? Probably. But like, actually.
I’m pretty sure I’d ask my dad to take me to the McDonald’s drive thru for their pancakes when I was like 7. So that’s that.
I’ve changed my ways completely – swear.
So much that I’m not even making real pancakes anymore, I’m making fake pancakes.
If you read my blogs, then you know that I’m all about replacements and balancing things out instead of completely eliminating things you like from your diet.
Like – my popcorn. Just add a twist, you know?
Fake pancakes. But better than real pancakes. In every way.
Healthier, only 3 ingredients, and super light so you don’t get that food-baby feeling to start the day.
They also take about 5 seconds to make, and if you know me at all you know I’m pretty much only into quick meals.
It’s PERFECT for a fulfilling breakfast and tastes SO.GOOD.
+ 1 banana
+ 2 eggs
+ (Vanilla extract is an option if you want it – tastes great with our without)
+ Mash the banana in a bowl so it’s basically not chunky anymore.
+ Add two eggs – whisk all of it together.
+ Add the cinnamon – as much as you want. For me, the more the better. Tastes so goooood.
MAJOR PRO TIP : if you have an egg ring USE IT. This is a huge game changer. It really keeps the batter together because it’s not as thick as real pancake mix.
If you don’t have one it’s totally fine – just be sure to not add too much batter to the pan at once.
+ coat the pan ( I used ghee ) but use whatever you like
+ cook for about 45 seconds to 1 minute on each side
Ta-da. Like, what? How quick, easy, and healthy?
I topped it with drizzled hot berries and a drop of raw coconut nectar. It’s just organic coconut sap nectar. Great syrup replacement! I got it at Whole Foods – but of course I gave you the Amazon link because.. Amazon. Duh.
All I did was heat up a bowl of mixed berries for 1 min. 30 sec. and mashed them up.
It comes out as the BEST topping for pretty much whatever you want. I’ve been thinking about adding it to my overnight oats.

I’ve seen these pancakes made with oatmeal and other ingredients too, but haven’t tried them. Anyone try other kinds or spiced this kind up?
