Happy February! (where the hell did that come from, right? woah.)
I’m a sucker for holiday’s – any holiday. Including the love struck one. SORRY.
I mean, come ON. Even if you aren’t in a relationship (which I know, it kind of blows up in your face a bit) you can totally make it a girls thing, no?
I get it. It isn’t really ‘the same’ but listen – a few years ago, I sent my best friend baked by melissa mini cupcakes that are SO TINY AND CUTE (stalk them – NYC post) because we were both single and hey, what girl doesn’t love cupcakes on v-day?
It was actually super fun sending them knowing she was going to be all into it. I LOVE giving gifts. So it made the holiday fun for me even without a boyfriend then.
You know what would be so chic for a valentines day gift that I thought of while writing this? Sugarfina – UH, YES.
They have the cutest valentines day collection going on ( I just checked ) – like to die for kind of cute. No drama.
Ok so I know some of you are like “ew so cheesy” blah blah blah.
Valentines day is cute? & fun.. if you let it be.
Plus – it’s an excuse to drink the cutest drinks.
You could totally throw a fun brunch with friends and make it fun and flirty with killer cocktails if you aren’t being a buzzkill about the holiday.

And complaining about how bad spin killed you yesterday, that time you made an avocado milk smoothie and it sucked, or how you want ten more glasses of champs.

You know what else is totally underrated? Buying flowers for yourself.
Sometimes I’ll go into Whole Foods and leave with flowers.
Seriously. With or without a boyfriend, it’s been a thing.
It’s a total mood lifer and it just makes you feel better? Just trust me, you can make this holiday fun. I swear.
Now that you know my feelings on valentines day, let’s talk about these cupcakes I drool over. ( I think they’re supposed to be muffins, but I made them into cupcakes. )
If you know me, you know I’m not slaving away in the kitchen. I make very quick, healthy meals and SNACKS. I love snacks. I hate big huge meals.
I actually think I get anxiety ( obviously ) about having a big dinner. LOL.
I get like anxious thinking about not snacking and having a huge-ass meal that puts me to sleep.
So messed up, right?
I also do not want to be cooking for like three hours, it just isn’t my thing? God bless all of you that do it – I give you so much credit.
So for valentines day this year, I’m making BA some banana cupcakes – from a box. YUP. From a box. Not all those bad ingredients, super quick, and so tasty.
ALSO – balance, remember? I put frosting on these ones to spice it up. It’s v-day, give ya man some suga suga!
& better yet – you can order everything you need right on Amazon – so nice, right?
+ a box of banana muffin mix – simple mills
+ 2 eggs
+ 1 cup of water
+ 2 tbsp of oil (I used coconut oil)
You need just those ingredients plus the back of the box for instructions.
You can even add some extra loving if you want! Throw some chia seeds in there, or even some dark chocolate chips.
They cook for abut 25-30 minutes.
If you are like me and are taking the super easy way out and aren’t whipping up your man ( or yourself, your girls, etc. ) some fresh frosting this year, you can get simple mills vanilla frosting. It gets the job done.
You can add whatever you’d like on the top. I made some with strawberries for a moody type of v-day. On the others I just put some dark chocolate bites on top.
You can literally add anything – spice it up!
I LOVE Simple Mills ( try their crackers.. ).
Great prices on Amazon – and I’m kind of nuts with this. I’m moving out with BA and we love to overdose on Amazon purchases.
And I mean like – completely OD on Amazon. The first couple of times we started to hangout, he had a million cartons of ice cream ( amazing flavors – I’ll give it to him ) delivered to his apartment. I could NOT believe it.
Total panic purchases from that kid. And me.
So it’s been a bit of a uhhhh, struggle.. to say the least.. to maintain our random food deliveries.
Or go into Whole Foods and leave without a 400 dollar bill. OOPS.
