First things first – I’m super into videos right now. They’re a cool way to show you things and they’re more in depth – if you follow along on snap then you get it.
I LOVE getting in depth tips & tricks from people – and a lot of those come from snapchat or videos.
So I thought I’d start getting more in depth with you guys.
I ‘interviewed’ Bill for ‘CHATS WITH CHAMPAGNE’ about relationships and.. bumble. YUP. The way we met is… interesting.
It’s actually really funny – stay tuned.
Anyway, that’s what got me on the video kick.

Onto a cooler topic – It’s almost the love holiday!!!
I’ve been attacking you guys with cute valentines day stuff – I’m a sucker for holidays SORRY.
Last night I made Bill a ‘date night’ dinner because I’ll be working late on valentines day, so I can’t be housewife material then.. you know?
I needed like 15 hours to prep.
I’m not the best cook – I do quick things. Always.
BUT. The dinner came out so good! LIKE, really really good.
Also it was super fun to set up as a “pick it yourself” type of style on the table.
Not too fancy and more relaxed than throwing a serious meal at them where they can’t really pick and choose.
Don’t you? Chime in – I’d love to know.
I just feel like it’s good to have that one on one time. Even if you live with them, work with them, whatever else.
It’s different having time to be completely alone and not talk about the typical things you’re talking about – anxiety ridden topics, basically.
Time to just.. chill. Together.
It’s also really important to me to let Bill know I appreciate him even though I say it almost daily.
So like.. making a dinner for him is important to me? Sounds dumb, but it makes me feel like he knows I really care. You know?
Even though we always see each other. Just the planned, put aside time and effort makes it.. better.
It’s the little things.
OK OK – back to the goodness.
I’m a sucker for tacos. Legitimately.
I eat them like I’m not able to gain weight in any way ( I wish ). I legit suck them down. LOL.
My all time favorite go-to dinner. Always.
Especially the word skinny in front of them.
SO – obviously I made Bill tacos.
The PERFECT date night meal.
I’ve seen ‘skinny taco’ recipes everywhere and they are all really good ( I try a lot of tacos ) so I kind of just go with whatever I have known – but I make it easier. Obviously.
+ 1 rotisserie chicken ( YUP. I cheated hard. )
+ 1 tbsp avocado oil ( or olive oil )
+ 1 tsp garlic powder
+ 2 tsp chili powder
+ 1 tsp cumin
+ 1 lime – the juice
+ 1 packaged coleslaw – dry ( cheater )
+ 1 cup greek yogurt plain
+ 1 lime – the juice
+ goat cheese
+ homemade guacamole
+ salsa ( I did store bought )
+ hot sauce ( optional )
+ packaged veggies ( I used frozen )
+ I made my guacamole first – but you can buy it, too.
+ shred your chicken – so easy with rotisserie ( and already cooked? game changer. )
+ add it to a bowl with the oil, garlic powder, chili powder, cumin, and lime juice and toss it all together.
+ put it on the stove for a few minutes to heat it all up together – this is quick since the chicken is already cooked.
+ toss the veggies on a pan with some oil to defrost them or heat them up.
While that’s heating up..
+ mix the coleslaw with greek yogurt & lime. It takes two seconds, literally just mix it all around with your hands.
+ once your chicken and veggies are hot and steamy you can take them off and set the table with bowls of everything listed for toppings and you’re done.
FAKE IT ‘TILL YOU MAKE IT SKINNY TACOS.
They don’t take long AT ALL.
You could use just lettuce – but the coleslaw really made a flavorful difference.
I also did the CIC skinny grapefruit marg that was sent out to subscribers to make it a real taco themed night!
Who doesn’t love a taco themed date night? Right?
